Ingredients
Scale
- 1 block (14-16 oz) extra-firm tofu, pressed and cubed
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon cornstarch
- 2 tablespoons sesame oil, divided
- 1 tablespoon grated fresh ginger
- 4 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup snap peas
- 1/4 cup water or vegetable broth
- 1 tablespoon rice vinegar
- 1 teaspoon honey or maple syrup (optional, for sweetness)
- Cooked rice or noodles, for serving
- Sesame seeds, for garnish (optional)
- Green onions, sliced, for garnish (optional)
Instructions
- In a bowl, toss the pressed tofu cubes with soy sauce and cornstarch until evenly coated.
- Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the coated tofu and cook until golden brown and crispy on all sides. Remove tofu from the skillet and set aside.
- Add the remaining 1 tablespoon of sesame oil to the skillet. Add the grated ginger and minced garlic, and stir-fry for about 30 seconds until fragrant.
- Add the sliced bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the water or vegetable broth, soy sauce, rice vinegar, and honey or maple syrup (if using).
- Pour the sauce into the skillet with the vegetables. Bring to a simmer and cook for 1-2 minutes, until the sauce has thickened slightly.
- Return the cooked tofu to the skillet and toss gently to coat with the sauce and vegetables.
- Serve immediately over cooked rice or noodles. Garnish with sesame seeds and sliced green onions if desired.
Notes
- Pressing the tofu is crucial for a good texture. You can use a tofu press or wrap the tofu in paper towels and place a heavy object on top for at least 30 minutes.
- Feel free to add other vegetables you enjoy, such as carrots, mushrooms, or zucchini.
- Adjust the amount of soy sauce and vinegar to your preference for saltiness and tanginess.
