These Ube Crinkle Cookies are a vibrant purple treat. They combine a classic crinkle cookie texture with the unique flavor of ube (purple yam). The cookies are soft inside with a delightful powdered sugar crackle on the outside, making them a visually stunning and delicious dessert.
Ingredients
Scale
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup ube halaya (purple yam jam)
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup powdered sugar, for rolling
Instructions
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and ube halaya until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Cover the dough and chill in the refrigerator for at least 1 hour.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Place the powdered sugar in a shallow bowl.
- Scoop rounded tablespoons of dough and roll them into balls.
- Roll each dough ball generously in the powdered sugar, ensuring it’s fully coated.
- Place the coated dough balls about 2 inches apart on the prepared baking sheets.
- Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft. The cookies will crackle as they bake.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Ensure your ube halaya is smooth for easy incorporation into the dough.
- Chilling the dough is crucial for preventing the cookies from spreading too much during baking.
- Do not overbake; the cookies should be soft in the center.
