  • 2 pounds yellow squash, thinly sliced
  • 1 cup chopped yellow onion
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup crushed Ritz crackers
  • 2 tablespoons melted butter


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt 1/2 cup of butter over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Add the thinly sliced yellow squash to the skillet and cook for about 10 minutes, stirring occasionally, until the squash is tender-crisp.
  4. While the squash is cooking, prepare the cheese sauce. In a separate saucepan, melt 1/2 cup of butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, to form a roux.
  5. Gradually whisk in the milk until smooth. Cook, stirring, until the sauce thickens.
  6. Remove the sauce from heat and stir in the shredded cheddar cheese, Monterey Jack cheese, salt, pepper, and garlic powder until the cheese is melted and the sauce is creamy.
  7. Add the cooked squash and onion mixture to the cheese sauce and stir to combine.
  8. Pour the squash mixture into a greased 9×13 inch baking dish.
  9. In a small bowl, combine the crushed Ritz crackers with 2 tablespoons of melted butter. Sprinkle this mixture evenly over the top of the casserole.
  10. Bake for 25-30 minutes, or until the topping is golden brown and the casserole is bubbly.
  11. Let it rest for a few minutes before serving.

Notes

  • You can substitute other types of squash if yellow squash is not available.
