- 2 pounds yellow squash, thinly sliced
- 1 cup chopped yellow onion
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 cup crushed Ritz crackers
- 2 tablespoons melted butter
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, melt 1/2 cup of butter over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the thinly sliced yellow squash to the skillet and cook for about 10 minutes, stirring occasionally, until the squash is tender-crisp.
- While the squash is cooking, prepare the cheese sauce. In a separate saucepan, melt 1/2 cup of butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, to form a roux.
- Gradually whisk in the milk until smooth. Cook, stirring, until the sauce thickens.
- Remove the sauce from heat and stir in the shredded cheddar cheese, Monterey Jack cheese, salt, pepper, and garlic powder until the cheese is melted and the sauce is creamy.
- Add the cooked squash and onion mixture to the cheese sauce and stir to combine.
- Pour the squash mixture into a greased 9×13 inch baking dish.
- In a small bowl, combine the crushed Ritz crackers with 2 tablespoons of melted butter. Sprinkle this mixture evenly over the top of the casserole.
- Bake for 25-30 minutes, or until the topping is golden brown and the casserole is bubbly.
- Let it rest for a few minutes before serving.

- You can substitute other types of squash if yellow squash is not available.
