- 1 cup heavy cream
- 1/2 cup unsalted butter, cut into pieces
- 12 ounces good quality white chocolate, finely chopped
- 1/4 cup strawberry puree (from fresh or frozen strawberries, strained)
- 2 tablespoons champagne or sparkling wine (plus more for serving)
- 1 teaspoon vanilla extract
- Optional: Pink or red food coloring
- For Coating: Melted white chocolate, freeze-dried strawberry powder, edible glitter
Instructions
- In a small saucepan, heat the heavy cream until it just begins to simmer. Do not boil.
- Remove the cream from the heat and add the butter pieces. Stir until the butter is completely melted and the mixture is smooth.
- Place the chopped white chocolate in a heatproof bowl. Pour the hot cream and butter mixture over the chocolate. Let it sit for 5 minutes without stirring.
- After 5 minutes, gently whisk the mixture until smooth and creamy.
- Stir in the strawberry puree, champagne, and vanilla extract. If using, add a drop or two of food coloring until you achieve your desired pink hue.
- Cover the bowl with plastic wrap, pressing it directly onto the surface of the ganache to prevent a skin from forming. Refrigerate for at least 2-3 hours, or until firm enough to scoop.
- Once firm, use a small cookie scoop or a spoon to scoop out portions of the ganache. Roll them into balls with your hands. Place the balls on a parchment-lined baking sheet and refrigerate again for about 30 minutes to firm up.
- Melt the white chocolate for coating in a double boiler or in the microwave in short intervals, stirring frequently.
- Dip each chilled truffle into the melted white chocolate, ensuring it is fully coated. You can use a fork or a dipping tool. Let excess chocolate drip back into the bowl.
- Place the coated truffles back onto the parchment-lined baking sheet.
- While the coating is still wet, sprinkle with freeze-dried strawberry powder and edible glitter, if desired.
- Allow the truffles to set completely. You can place them in the refrigerator for about 15-20 minutes to speed up the process.
- Serve your beautiful truffles with a glass of champagne or sparkling wine.
