Ingredients

Scale
  • 1 pound yellow squash, thinly sliced
  • 1 pound zucchini, thinly sliced
  • 1 cup chopped onion
  • 1/2 cup vegan butter
  • 1/4 cup all-purpose flour
  • 1 1/2 cups unsweetened non-dairy milk
  • 1/2 cup vegan shredded cheese
  • 1/4 cup nutritional yeast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup crushed vegan crackers or breadcrumbs
  • 2 tablespoons melted vegan butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×13 inch baking dish.
  3. In a large skillet, sauté the chopped onion in 2 tablespoons of the melted vegan butter until softened, about 5 minutes.
  4. Add the remaining 6 tablespoons of vegan butter to the skillet and melt.
  5. Whisk in the flour and cook for 1 minute, stirring constantly, to create a roux.
  6. Gradually whisk in the non-dairy milk until smooth.
  7. Bring the mixture to a simmer, stirring until it thickens.
  8. Remove from heat and stir in the vegan cheese, nutritional yeast, salt, and pepper until the cheese is melted and the sauce is creamy.
  9. Add the sliced squash and zucchini to the sauce and gently toss to coat.
  10. Pour the mixture into the prepared baking dish.
  11. In a small bowl, combine the crushed crackers or breadcrumbs with the 2 tablespoons of melted vegan butter.
  12. Sprinkle the topping evenly over the casserole.
  13. Bake for 30-40 minutes, or until bubbly and the topping is golden brown.
  14. Let stand for 5-10 minutes before serving.

Notes

  • For a crispier topping, you can broil the casserole for the last 1-2 minutes, watching it closely to prevent burning.
  • Feel free to add other vegetables like finely diced bell peppers or corn for extra flavor and texture.
  • This casserole can be assembled ahead of time and baked when ready to serve. Cover and refrigerate, then add a few extra minutes to the baking time.
