Instructions

  1. Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  2. Prepare the flax egg by mixing ground flaxseed and water in a small bowl. Let it sit for at least 5 minutes to thicken.
  3. In a large bowl, whisk together the flax egg, non-dairy milk, melted coconut oil, sugar or maple syrup, and vanilla extract until well combined.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  6. Gently fold in the grated zucchini until evenly distributed. If using, add the chopped walnuts or chocolate chips and fold them in.
  7. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
