Ingredients

  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers (any color)
  • 1 cup snap peas
  • 1 cup sliced mushrooms
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • For the Peanut Sauce:
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon sriracha (optional)
  • 2-4 tablespoons warm water, to thin


Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add broccoli, carrots, bell peppers, snap peas, mushrooms, and onion. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  3. Add minced garlic and grated ginger. Cook for 1 minute more until fragrant.
  4. While the vegetables are cooking, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, and sriracha (if using) in a small bowl.
  5. Gradually whisk in warm water, 1 tablespoon at a time, until the sauce reaches your desired consistency.
  6. Pour the peanut sauce over the stir-fried vegetables. Toss to coat evenly.
  7. Cook for another 1-2 minutes until the sauce has thickened slightly and coats the vegetables.
  8. Serve hot and enjoy!
