Description

  • 8 large flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil or butter for cooking
  • For Black Bean & Corn: 1 (15 ounce) can black beans, rinsed and drained; 1/2 cup frozen corn kernels, thawed; 1/4 cup chopped cilantro
  • For Spinach & Feta: 1 cup fresh spinach, chopped; 1/2 cup crumbled feta cheese; 1/4 teaspoon garlic powder
  • For Mushroom & Pepper: 1 cup sliced mushrooms; 1/2 cup sliced bell pepper (any color); 1/4 teaspoon cumin


Instructions

  1. Prepare your fillings: Combine black beans, corn, and cilantro for the first type. Mix spinach, feta, and garlic powder for the second. Sauté mushrooms and peppers with cumin until soft, then set aside for the third.
  2. Heat a large skillet or griddle over medium heat. Add a small amount of oil or butter.
  3. Place one tortilla in the hot skillet. Sprinkle a layer of the mixed cheeses over half of the tortilla surface.
  4. Spoon about one-third of your chosen filling mixture over the cheese layer.
  5. Fold the empty half of the tortilla over the filling to create a half-moon shape. Press down gently with a spatula.
  6. Cook for 2 to 3 minutes per side, until the tortilla is golden brown and the cheese is fully melted.
  7. Remove the quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and fillings.
  8. Cut each quesadilla into wedges before serving.

Notes

  • For extra crispiness, cook the quesadillas slightly longer over medium-low heat.
  • You can substitute vegan cheese shreds for a dairy-free option.
  • Serve with salsa, guacamole, or plain Greek yogurt instead of sour cream.
