Description

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cucumber, diced
  • 1/2 cup frozen corn, thawed
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper to taste


Instructions

  1. Cook the orzo pasta according to package directions until al dente. Drain the pasta and rinse immediately with cold water to stop the cooking process. Set aside to cool completely.
  2. While the pasta cools, prepare the vinaigrette. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, and dried oregano. Season with salt and pepper.
  3. In a large bowl, combine the cooled orzo, cherry tomatoes, red bell pepper, yellow bell pepper, cucumber, corn, olives, and red onion.
  4. Pour the prepared vinaigrette over the orzo and vegetable mixture. Toss gently until all ingredients are evenly coated.
  5. Stir in the fresh parsley and basil.
  6. Taste the salad and adjust seasoning if necessary.
  7. Cover the bowl and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
