Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 tablespoon vegetable oil
  • 1/2 cup water
  • 1/4 cup white vinegar
  • 1/4 cup granulated sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (adjust to taste)


Instructions

  1. Cut the chicken into bite-sized pieces.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, whisk together the water, vinegar, sugar, soy sauce, cornstarch, garlic powder, ground ginger, and red pepper flakes.
  4. Bring the sauce mixture to a simmer over medium heat, stirring constantly until the sauce thickens, about 2 to 3 minutes.
  5. Return the cooked chicken to the skillet. Toss the chicken pieces until they are fully coated with the sweet chili glaze.
  6. Cook for 1 minute more to heat the chicken through. Serve immediately over rice or with steamed vegetables.

Notes

  • Using chicken thighs is often cheaper than breasts and stays moister during cooking.
  • If you have bottled sweet chili sauce, you can substitute 1/2 cup of it for the water, vinegar, sugar, and cornstarch mixture, reducing the soy sauce slightly.
  • This recipe scales well for meal prepping larger batches.
