Description
Make a delicious, sweet, and spicy chicken dinner using simple, budget-friendly ingredients. This recipe focuses on low cost without sacrificing flavor.
Ingredients
Scale
- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1 tablespoon vegetable oil
- 1/2 cup water
- 1/4 cup white vinegar
- 1/4 cup granulated sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes (adjust to taste)
Instructions
- Cut the chicken into bite-sized pieces.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set it aside.
- In the same skillet, whisk together the water, vinegar, sugar, soy sauce, cornstarch, garlic powder, ground ginger, and red pepper flakes.
- Bring the sauce mixture to a simmer over medium heat, stirring constantly until the sauce thickens, about 2 to 3 minutes.
- Return the cooked chicken to the skillet. Toss the chicken pieces until they are fully coated with the sweet chili glaze.
- Cook for 1 minute more to heat the chicken through. Serve immediately over rice or with steamed vegetables.
Notes
- Using chicken thighs is often cheaper than breasts and stays moister during cooking.
- If you have bottled sweet chili sauce, you can substitute 1/2 cup of it for the water, vinegar, sugar, and cornstarch mixture, reducing the soy sauce slightly.
- This recipe scales well for meal prepping larger batches.
