- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning
- 3/4 cup water
- 1 can (15 ounces) refried beans
- 1 can (10 ounces) diced tomatoes and green chilies, undrained
- 1 can (15 ounces) corn, drained
- 1 bag (9 ounces) tortilla chips, crushed
- 1 1/2 cups shredded cheddar cheese
- Optional toppings: sour cream, salsa, chopped cilantro, diced onion, jalapeños
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 2-3 minutes, or until the sauce has thickened.
- Add the refried beans, diced tomatoes and green chilies, and corn to the skillet. Stir well to combine.
- Spread the crushed tortilla chips evenly over the bottom of a 9×13 inch baking dish.
- Pour the meat and bean mixture over the chips.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly.
- Serve hot with your favorite taco toppings.
Notes
- For a spicier casserole, use a spicy taco seasoning or add a pinch of cayenne pepper to the meat mixture.
- If you don’t have refried beans, you can use mashed pinto beans as a substitute.
- This casserole can be assembled ahead of time and baked just before serving.
