  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • 3/4 cup water
  • 1 can (15 ounces) refried beans
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained
  • 1 can (15 ounces) corn, drained
  • 1 bag (9 ounces) tortilla chips, crushed
  • 1 1/2 cups shredded cheddar cheese
  • Optional toppings: sour cream, salsa, chopped cilantro, diced onion, jalapeños


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
  3. Stir in the taco seasoning and water. Bring to a simmer and cook for 2-3 minutes, or until the sauce has thickened.
  4. Add the refried beans, diced tomatoes and green chilies, and corn to the skillet. Stir well to combine.
  5. Spread the crushed tortilla chips evenly over the bottom of a 9×13 inch baking dish.
  6. Pour the meat and bean mixture over the chips.
  7. Sprinkle the shredded cheddar cheese evenly over the top.
  8. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Serve hot with your favorite taco toppings.

Notes

  • For a spicier casserole, use a spicy taco seasoning or add a pinch of cayenne pepper to the meat mixture.
  • If you don’t have refried beans, you can use mashed pinto beans as a substitute.
  • This casserole can be assembled ahead of time and baked just before serving.
