Instructions
- Place the ricotta cheese, olive oil, lemon juice, salt, and pepper into a food processor.
- Process the mixture for 2 to 3 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth and airy.
- Transfer the whipped ricotta to a shallow serving bowl.
- Drizzle the 1/4 cup of hot honey evenly over the top of the dip.
- Sprinkle the chopped pistachios over the honey, if using.
- Garnish with small sprigs of fresh rosemary, if desired.

- For a thicker texture, use whole milk ricotta and drain any excess liquid before whipping.
