  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large sweet potato, peeled and thinly sliced (for topping)


Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish with avocado oil.
  2. Heat avocado oil in a skillet over medium heat. Add onion and celery and cook until softened, about 5 minutes.
  3. Add the diced sweet potato, coconut milk, chicken broth, smoked paprika, garlic powder, salt, and pepper to the skillet. Bring to a simmer, then cook until the sweet potato pieces are slightly tender, about 8 minutes.
  4. Stir in the shredded chicken and the compliant BBQ sauce until everything is well combined.
