Description
Prepare a satisfying, family-friendly casserole adhering strictly to Whole30 rules, featuring shredded chicken in a compliant BBQ sauce, bound with vegetables instead of grains or dairy.
Ingredients
Scale
- 2 cups cooked, shredded chicken breast
- 1 cup compliant Whole30 BBQ sauce
- 1 cup chopped onion
- 1 tablespoon avocado oil
- 1 cup chopped celery
- 1 medium sweet potato, peeled and diced
- 1/2 cup full-fat coconut milk (canned, unsweetened)
- 1/4 cup chicken broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large sweet potato, peeled and thinly sliced (for topping)
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish with avocado oil.
- Heat avocado oil in a skillet over medium heat. Add onion and celery and cook until softened, about 5 minutes.
- Add the diced sweet potato, coconut milk, chicken broth, smoked paprika, garlic powder, salt, and pepper to the skillet. Bring to a simmer, then cook until the sweet potato pieces are slightly tender, about 8 minutes.
- Stir in the shredded chicken and the compliant BBQ sauce until everything is well combined.
- Transfer the chicken mixture to the prepared baking dish.
- Arrange the thin sweet potato slices evenly over the top of the chicken mixture to create a crust layer.
- Bake for 25 to 30 minutes, or until the topping is tender and the edges of the casserole are bubbling.
- Let the casserole rest for 5 minutes before serving.
Notes
- You can cook the chicken in a slow cooker or Instant Pot ahead of time for easier assembly.
- If you do not have Whole30 compliant BBQ sauce, mix 1/2 cup tomato paste, 1/4 cup apple cider vinegar, 2 tablespoons compliant sweetener (like date paste), 1 teaspoon onion powder, 1 teaspoon garlic powder, and water to thin.
- For a make-ahead option, assemble the casserole completely, cover, and refrigerate for up to 24 hours. Add 10 minutes to the baking time if baking directly from the refrigerator.
