Ingredients

Scale
  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 pound ground chicken or turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1/2 cup chopped fresh cilantro
  • Optional toppings: avocado, salsa, fresh lime wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them several times with a fork.
  3. Bake the sweet potatoes for 45-60 minutes, or until tender.
  4. While the sweet potatoes are baking, heat the olive oil in a large skillet over medium heat.
  5. Add the ground chicken or turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  6. Add the chopped onion and cook until softened, about 5 minutes.
  7. Stir in the minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute more until fragrant.
  8. Pour in the diced tomatoes and bring to a simmer. Cook for 10-15 minutes, stirring occasionally, until the sauce has thickened.
  9. Stir in the fresh cilantro.
  10. Once the sweet potatoes are tender, carefully slice them lengthwise and gently fluff the insides with a fork.
  11. Spoon the meat mixture into the sweet potatoes.
  12. Serve immediately with your favorite optional toppings.

Notes

  • Ensure your diced tomatoes do not contain any added sugar or non-compliant ingredients.
  • Adjust the spices to your preference.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently.
