Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 pound ground turkey or chicken
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 (15 ounce) can black beans, rinsed and drained (omit for strict Whole30)
  • 1/2 cup salsa
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: avocado slices, extra salsa, compliant sour cream


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them all over with a fork.
  3. Bake the sweet potatoes for 45-60 minutes, or until tender when pierced with a knife.
  4. While the sweet potatoes are baking, heat the olive oil in a large skillet over medium heat.
  5. Add the ground turkey or chicken and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  6. Add the chopped onion and cook until softened, about 5 minutes.
  7. Stir in the minced garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute more until fragrant.
  8. If using, stir in the rinsed and drained black beans.
  9. Add the salsa and stir to combine. Season with salt and pepper to taste.
  10. Once the sweet potatoes are tender, carefully slice them lengthwise and gently fluff the insides with a fork.
  11. Spoon the turkey mixture into the sweet potatoes.
  12. Garnish with fresh cilantro and any desired optional toppings.
