Description
Prepare this bright and refreshing fruit salad using seasonal winter produce, finished with a simple, zesty honey-lime dressing.
Ingredients

- 2 large navel oranges, peeled and segmented
- 2 pink grapefruit, peeled and segmented
- 3 firm pears, cored and diced
- 2 crisp apples, cored and diced
- 1 cup pomegranate arils
- 2 kiwis, peeled and sliced
- 1/4 cup fresh lime juice
- 2 tablespoons honey
- 1 tablespoon orange juice
- 1 teaspoon lime zest
Instructions
- Prepare all the fruit: segment the oranges and grapefruit, dice the pears and apples, and slice the kiwis. Place all prepared fruit into a large bowl.
- In a small bowl, whisk together the lime juice, honey, orange juice, and lime zest until the honey dissolves completely. This is your dressing.
- Pour the honey-lime dressing over the fruit mixture.
- Gently toss the fruit until everything is lightly coated with the dressing.
- Sprinkle the pomegranate arils over the salad just before serving.
Notes
- For the best presentation, add the pomegranate arils right before you serve the salad.
- If you want a slight crunch, add 1/4 cup of toasted pecans or walnuts.
- To keep the apples and pears from browning, toss them with a small amount of the citrus juice before combining with the other fruits.
