Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, beat the granulated sugar and eggs until well combined.
  4. Gradually whisk in the vegetable oil and vanilla extract into the sugar-egg mixture until smooth.
  5. Stir in the grated zucchini.
