Crispy and flavorful fritters made with zucchini and carrots.
Ingredients

- 2 cups grated zucchini, squeezed dry
- 1 cup grated carrots, squeezed dry
- 1/4 cup all-purpose flour
- 2 large eggs, lightly beaten
- 1/4 cup finely chopped onion
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, for frying
Instructions
- In a large bowl, combine the grated zucchini, carrots, flour, eggs, onion, parsley, salt, and pepper. Mix until well combined.
- Heat the olive oil in a large non-stick skillet over medium heat.
- Spoon 2-3 tablespoons of the mixture for each fritter into the hot skillet, flattening slightly with the back of a spoon. Do not overcrowd the pan.
- Cook for 3-4 minutes per side, or until golden brown and cooked through.
- Remove fritters from the skillet and place on a paper towel-lined plate to drain excess oil.
- Serve warm.
Notes
- Squeeze as much liquid as possible from the grated zucchini and carrots to prevent soggy fritters.
- You can add other vegetables like finely chopped bell peppers or corn.
- Serve with a dollop of sour cream, yogurt, or your favorite dipping sauce.
