Description

Make these Almond Joy Energy Balls when you crave that sweet, chocolatey, coconut, and almond candy bar flavor in a healthier, no-bake snack. They are quick to prepare and perfect for satisfying your sweet tooth guilt-free.

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup dark chocolate chips
  • 1/4 cup chopped almonds
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Place the rolled oats and shredded coconut in a food processor. Pulse until the mixture resembles coarse flour.
  2. Add the almond butter, honey (or maple syrup), and vanilla extract to the food processor. Blend until the mixture comes together and is sticky.
  3. Stir in the chocolate chips and chopped almonds by hand.
  4. Roll the mixture into small, 1-inch balls.
  5. Place the balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up before serving.

Notes

  • For an extra chocolatey hit, you can drizzle melted dark chocolate over the finished balls.
  • If the mixture seems too dry, add a teaspoon of water or a little more almond butter.
  • Store these energy balls in an airtight container in the refrigerator for up to one week.
