- 1/2 cup unsweetened shredded coconut
- 1/4 cup almond butter

- Pinch of salt
Instructions
- Place the rolled oats and shredded coconut in a food processor. Pulse until the mixture resembles coarse flour.
- Add the almond butter, honey (or maple syrup), and vanilla extract to the food processor. Blend until the mixture comes together and is sticky.
- Stir in the chocolate chips and chopped almonds by hand.
- Roll the mixture into small, 1-inch balls.
- Place the balls on a baking sheet lined with parchment paper.
