Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt for the muffin batter.
  3. In a separate medium bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the chopped apples.
  6. In a small bowl, combine the flour, brown sugar, and cinnamon for the streusel topping.
  7. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  8. Divide the muffin batter evenly among the prepared muffin cups, filling each about two-thirds full.
  9. Sprinkle the streusel topping generously over the batter in each muffin cup.
