Description

Make a healthier version of your favorite Tex-Mex dish with these easy, oven-baked chicken chimichangas that achieve a satisfying crunch without deep frying.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup green onions, sliced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 8 large flour tortillas (burrito size)
  • Cooking spray or melted butter for brushing
  • Optional: Salsa, guacamole, or extra sour cream for serving


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking sheet.
  2. In a medium bowl, combine the shredded chicken, Monterey Jack cheese, softened cream cheese, sour cream, green onions, chili powder, cumin, and garlic powder. Mix until everything is well combined.
  3. Warm the flour tortillas briefly in the microwave or a dry skillet to make them pliable.
  4. Place about 1/4 cup of the chicken mixture onto the center of each tortilla.
  5. Fold the sides of the tortilla inward over the filling, then tightly roll the tortilla from the bottom up to seal the filling inside, creating a neat burrito shape.
  6. Place the rolled chimichangas seam-side down on the prepared baking sheet.
  7. Lightly spray the tops and sides of the chimichangas with cooking spray or brush them with melted butter for crispiness.
  8. Bake for 15 to 20 minutes, flipping halfway through, until the tortillas are golden brown and crispy.
  9. Serve immediately with your preferred toppings.

Notes

  • For extra crispiness, you can lightly brush the tortillas with melted butter instead of cooking spray.
  • Use leftover rotisserie chicken to speed up the prep time.
