  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika


Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
  2. Place the sweet potato cubes in a large bowl.
  3. Drizzle the olive oil over the potatoes. Toss them until they are evenly coated.
  4. In a small bowl, mix the salt, pepper, garlic powder, and paprika. Sprinkle this seasoning mix over the oiled potatoes and toss again until the seasoning adheres.
  5. Spread the seasoned sweet potatoes in a single layer on a large baking sheet. Do not overcrowd the pan; use two sheets if necessary for maximum crispiness.
  6. Roast for 20 minutes.
  7. Remove the pan from the oven and flip the potatoes with a spatula.
  8. Return the pan to the oven and roast for another 10 to 15 minutes, or until the edges are browned and crispy and the centers are tender when pierced with a fork.

Notes

  • For a sweet variation, omit the paprika and garlic powder. Toss the potatoes with 1 tablespoon of maple syrup and 1/2 teaspoon of cinnamon before roasting.
  • For a savory Parmesan version, toss the hot, freshly roasted potatoes with 1/4 cup of grated Parmesan cheese.
  • To ensure crispiness, make sure the potatoes are dry before oiling and do not let them touch on the baking sheet.
