- 1/2 teaspoon cayenne pepper (adjust for heat)
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt

- Mix paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, black pepper, and salt in a small bowl to create the seasoning blend.
- Pat the salmon fillets dry with paper towels. This helps create a better crust.
- Generously coat all sides of each salmon fillet with the homemade seasoning blend, pressing the spices onto the fish.
- Heat the avocado oil in a large, heavy-bottomed skillet (cast iron works best) over medium-high heat until the oil shimmers.
- Carefully place the seasoned salmon fillets into the hot skillet. Do not overcrowd the pan; cook in batches if necessary.
- Sear the salmon for 3 to 4 minutes without moving it until a dark crust forms.
- Gently flip the fillets and cook for another 3 to 5 minutes, depending on the thickness, until the salmon is cooked through and flakes easily with a fork.
- Remove the salmon from the skillet and serve immediately.
Notes
- For a less spicy version, reduce or omit the cayenne pepper in the seasoning mix.
- If you prefer oven baking, place seasoned fillets on a baking sheet coated with oil and bake at 400°F (200°C) for 12 to 15 minutes.
- Serve this salmon with a squeeze of fresh lemon juice or a simple dill sauce.
