Description

Make chewy, intensely chocolate cookies with shiny, crackly tops that taste like a fudgy brownie.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 3/4 cups granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 3/4 cup unsweetened cocoa powder, natural or Dutch-process
  • 1 teaspoon instant espresso powder (optional, for depth)
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until fully combined.
  3. Whisk in the eggs one at a time until the mixture is smooth. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, espresso powder (if using), and salt.
  5. Add the dry ingredients to the wet ingredients. Mix on low speed or by hand until just combined. Do not overmix.
  6. Fold in the chocolate chips.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each mound.
  8. Bake for 10 to 13 minutes. The edges should look set, but the centers will still look slightly soft and shiny.
  9. Remove from the oven. Immediately tap the baking sheets firmly on the counter 2 or 3 times. This helps create the signature crinkly top.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For the best fudgy texture, slightly underbake the cookies. They firm up as they cool.
  • Use high-quality cocoa powder for the most intense chocolate flavor.
  • Chilling the dough for 30 minutes before scooping can help prevent excessive spreading.
