Description

Make soft, chewy Christmas Gooey Butter Cookies using a simple cake mix base and festive red and green sprinkles for a melt-in-your-mouth holiday treat.


Ingredients

  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 8 oz cream cheese, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 box (16 oz) powdered sugar, divided
  • 1/2 cup red and green sprinkles


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the cake mix, melted butter, and the first egg. Mix until a soft dough forms.
  3. Roll the dough into small balls, about 1 inch in diameter. Place these dough balls into a small bowl containing 1/2 cup of the powdered sugar and roll to coat completely. Set aside.
  4. In a separate bowl, beat the softened cream cheese until smooth. Add the second egg and vanilla extract, mixing until just combined.
  5. Gradually beat in the remaining powdered sugar until the mixture is smooth.
  6. Take each coated dough ball and press it gently into the cream cheese mixture, coating it thoroughly.
  7. Roll the coated dough ball in the red and green sprinkles until covered.
  8. Place the coated balls onto the prepared baking sheets, about 2 inches apart.
  9. Bake for 10 to 12 minutes. The edges will be set, but the center should still look soft. Do not overbake.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For the best gooey texture, remove the cookies from the oven when the centers still look slightly underdone.
  • You can substitute the yellow cake mix with white cake mix if preferred.
  • Store cooled cookies in an airtight container at room temperature for up to 4 days.
