- 12 ounces pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Fresh basil, for garnish
Instructions
- Cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
- While pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
- Stir in the chopped sun-dried tomatoes and red pepper flakes (if using). Cook for another minute.
- Pour in the heavy cream and bring to a gentle simmer.
- Reduce heat to low and stir in the grated Parmesan cheese until the sauce is smooth and thickened.
- Season the sauce with salt and pepper to your taste.
- Add the drained pasta to the skillet with the sauce. Toss to coat evenly.
- If the sauce seems too thick, add a little of the reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
- Serve immediately, garnished with fresh basil.
Notes
- For a richer sauce, you can add a tablespoon of butter along with the olive oil.
- If you don’t have heavy cream, half-and-half can be used, but the sauce may be thinner.
- Feel free to add other vegetables like spinach or mushrooms to this dish.
