Prepare this simple, bright lemon herb quinoa quickly. It works well as a light lunch or a side dish for any main course.

- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 1 tablespoon olive oil
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped fresh dill
- 1 tablespoon chopped fresh mint
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Combine the rinsed quinoa and vegetable broth (or water) in a medium saucepan. Bring to a boil over high heat.
- Reduce heat to low, cover the saucepan, and simmer for 15 minutes, or until all the liquid is absorbed.
- Remove the saucepan from the heat and let it stand, covered, for 5 minutes. Fluff the quinoa gently with a fork.
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper to make the dressing.
- Transfer the warm, fluffed quinoa to a large bowl. Pour the dressing over the quinoa and toss to coat evenly.
- Stir in the fresh parsley, dill, and mint. Serve warm or chilled.
Notes
- Rinsing the quinoa removes saponins, which prevents a bitter taste.
- For a heartier meal, add 1/2 cup of chopped cucumber or 1/4 cup of toasted pine nuts after mixing.
- If you prefer a tangier flavor, increase the lemon juice by one teaspoon.
