Description

Prepare this simple, bright lemon herb quinoa quickly. It works well as a light lunch or a side dish for any main course.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Combine the rinsed quinoa and vegetable broth (or water) in a medium saucepan. Bring to a boil over high heat.
  2. Reduce heat to low, cover the saucepan, and simmer for 15 minutes, or until all the liquid is absorbed.
  3. Remove the saucepan from the heat and let it stand, covered, for 5 minutes. Fluff the quinoa gently with a fork.
  4. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper to make the dressing.
  5. Transfer the warm, fluffed quinoa to a large bowl. Pour the dressing over the quinoa and toss to coat evenly.
  6. Stir in the fresh parsley, dill, and mint. Serve warm or chilled.

Notes

  • Rinsing the quinoa removes saponins, which prevents a bitter taste.
  • For a heartier meal, add 1/2 cup of chopped cucumber or 1/4 cup of toasted pine nuts after mixing.
  • If you prefer a tangier flavor, increase the lemon juice by one teaspoon.
