Description

Make flavorful shrimp fajitas quickly in one skillet. This recipe is perfect for a fast weeknight dinner with minimal cleanup.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lime
  • 8 small flour tortillas


Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sliced onion and bell peppers to the skillet. Cook, stirring occasionally, for 5 to 7 minutes until vegetables begin to soften.
  3. Add the chili powder, cumin, smoked paprika, salt, and pepper to the vegetables. Stir to coat.
  4. Add the shrimp to the skillet. Cook for 3 to 5 minutes, stirring often, until the shrimp are pink and cooked through. Do not overcook.
  5. Remove the skillet from the heat. Squeeze the lime juice over the shrimp and vegetables. Stir gently.
  6. Warm the tortillas according to package directions.
  7. Serve the shrimp and vegetable mixture immediately in the warm tortillas.

Notes

  • For extra flavor, mix 1 teaspoon of dried oregano and 1/2 teaspoon of garlic powder with the other spices.
  • Serve with your favorite toppings like salsa, sour cream, or avocado slices.
  • If you prefer, use pre-cut fajita vegetables to save prep time.
