- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 large onion, sliced
- 2 bell peppers (any color), sliced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1 lime
- 8 small flour tortillas
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the sliced onion and bell peppers to the skillet. Cook, stirring occasionally, for 5 to 7 minutes until vegetables begin to soften.
- Add the chili powder, cumin, smoked paprika, salt, and pepper to the vegetables. Stir to coat.
- Add the shrimp to the skillet. Cook for 3 to 5 minutes, stirring often, until the shrimp are pink and cooked through. Do not overcook.
- Remove the skillet from the heat. Squeeze the lime juice over the shrimp and vegetables. Stir gently.
- Warm the tortillas according to package directions.
- Serve the shrimp and vegetable mixture immediately in the warm tortillas.
Notes
- For extra flavor, mix 1 teaspoon of dried oregano and 1/2 teaspoon of garlic powder with the other spices.
- Serve with your favorite toppings like salsa, sour cream, or avocado slices.
- If you prefer, use pre-cut fajita vegetables to save prep time.
