  • 8 tablespoons unsalted butter, softened

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, halved
  • 1 onion, quartered


Instructions

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. In a small bowl, mix the softened butter, minced garlic, rosemary, thyme, salt, and pepper. This is your herb butter.
  3. Gently loosen the skin over the chicken breasts and thighs. Rub about half of the herb butter mixture directly onto the meat underneath the skin.
  4. Rub the remaining herb butter all over the outside of the chicken.
  5. Stuff the cavity of the chicken with the lemon halves and onion quarters.
  6. Place the chicken in a roasting pan or a large oven-safe skillet.
  7. Roast for 15 minutes at 425 degrees F (220 degrees C).
  8. Reduce the oven temperature to 375 degrees F (190 degrees C). Continue roasting for about 1 hour and 15 minutes, or until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F (74 degrees C).
