- 8 tablespoons unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves

- 1/2 teaspoon black pepper
- 1 lemon, halved
- 1 onion, quartered
Instructions
- Preheat your oven to 425 degrees F (220 degrees C).
- In a small bowl, mix the softened butter, minced garlic, rosemary, thyme, salt, and pepper. This is your herb butter.
- Gently loosen the skin over the chicken breasts and thighs. Rub about half of the herb butter mixture directly onto the meat underneath the skin.
- Rub the remaining herb butter all over the outside of the chicken.
- Stuff the cavity of the chicken with the lemon halves and onion quarters.
- Place the chicken in a roasting pan or a large oven-safe skillet.
- Roast for 15 minutes at 425 degrees F (220 degrees C).
- Reduce the oven temperature to 375 degrees F (190 degrees C). Continue roasting for about 1 hour and 15 minutes, or until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F (74 degrees C).
- Let the chicken rest for 10-15 minutes before carving. This keeps your meat juicy.
