  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch

  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/2 cup milk
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional, for topping)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, gently toss the sliced peaches with 1/2 cup sugar, cornstarch, cinnamon, nutmeg, and lemon juice. Pour the peach mixture into a 9×13 inch baking dish.
  3. In a separate bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  5. Gradually add the milk, stirring until just combined to form a soft dough. Do not overmix.
  6. Drop spoonfuls of the dough over the peach mixture, leaving some gaps for steam to escape.
  7. Brush the tops of the dough with the beaten egg and sprinkle with coarse sugar, if desired.
  8. Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let the cobbler cool slightly before serving.

Notes

  • Use ripe, but firm peaches for the best texture.
  • If fresh peaches are not in season, you can use frozen or canned (drained) peaches. Adjust sugar if using canned.
