  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup water
  • 1 tablespoon lemon juice


Instructions

  1. In a small bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in melted butter until crumbs are moistened. Press mixture evenly into the bottom of a 7-inch springform pan.
  2. Wrap the outside of the springform pan tightly with heavy-duty aluminum foil.
  3. In a large bowl, beat softened cream cheese and 1 cup sugar with an electric mixer until smooth. Beat in sour cream and vanilla extract until combined.
  4. Add eggs one at a time, beating on low speed just until each is incorporated. Do not overmix.
  5. Pour the cream cheese mixture over the graham cracker crust.
  6. Place the water and lemon juice in the bottom of the Instant Pot insert.
  7. Carefully lower the foil-wrapped springform pan onto the trivet in the Instant Pot.
  8. Secure the lid and set the steam release valve to sealing.
  9. Cook on High Pressure for 35 minutes.
  10. Allow pressure to release naturally for 15 minutes, then carefully perform a quick release for any remaining pressure.
  11. Remove the springform pan from the Instant Pot and remove the foil.
  12. Let the cheesecake cool on a wire rack for 1 hour, then refrigerate for at least 4 hours, or preferably overnight.
  13. Run a thin knife around the edge of the cheesecake before releasing the springform pan sides.
