Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking soda, cocoa powder, and salt. Set aside.
  3. In a large bowl, cream together the 1 cup sugar and 1/2 cup butter until light and fluffy. Beat in the eggs one at a time, then mix in 1 teaspoon vanilla extract.
  4. In a small bowl, mix the buttermilk, vinegar, and red food coloring until combined.
  5. Alternate adding the dry ingredients and the buttermilk mixture to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
