Instructions

  1. Melt butter in a large skillet over medium-high heat.
  2. Add thawed corn kernels to the skillet and cook, stirring occasionally, until lightly charred, about 7-10 minutes.
  3. Remove corn from heat and transfer to a large bowl.
  4. Add mayonnaise, sour cream, cotija cheese, cilantro, minced jalapeño (if using), minced garlic, chili powder, smoked paprika, and cayenne pepper (if using) to the bowl with the corn.
  5. Squeeze in the lime juice.
