- 4 cups frozen corn kernels, thawed
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/2 cup crumbled cotija cheese, plus more for garnish
- 2 tablespoons chopped fresh cilantro, plus more for garnish
- 1 jalapeño, finely minced (optional, for heat)
- 1 clove garlic, minced
- 1/2 teaspoon chili powder, plus more for garnish
- 1/4 teaspoon smoked paprika
- Pinch of cayenne pepper (optional, for extra heat)
- Juice of 1/2 lime, plus wedges for serving
- Salt to taste
- Black pepper to taste
Instructions
- Melt butter in a large skillet over medium-high heat.
- Add thawed corn kernels to the skillet and cook, stirring occasionally, until lightly charred, about 7-10 minutes.
- Remove corn from heat and transfer to a large bowl.
- Add mayonnaise, sour cream, cotija cheese, cilantro, minced jalapeño (if using), minced garlic, chili powder, smoked paprika, and cayenne pepper (if using) to the bowl with the corn.
- Squeeze in the lime juice.
- Stir everything together until well combined.
- Season with salt and black pepper to taste.
- Garnish with extra cotija cheese, cilantro, and a sprinkle of chili powder before serving.
- Serve warm with lime wedges on the side.

- For a smoky flavor, use fire-roasted corn.
