Description
These tuna stuffed avocados are a delicious and easy low-carb and keto-friendly meal or snack. They are packed with protein and healthy fats.
Ingredients
Scale
- 2 ripe avocados
- 1 (5 ounce) can tuna in water, drained
- 2 tablespoons mayonnaise (full-fat for keto)
- 1 tablespoon finely chopped celery
- 1 tablespoon finely chopped red onion
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
- Optional: Fresh dill or parsley for garnish
Instructions
- Halve the avocados and remove the pits. Scoop out some of the avocado flesh to create a larger well, leaving about 1/2 inch of avocado around the skin.
- In a medium bowl, flake the drained tuna.
- Add the mayonnaise, celery, red onion, Dijon mustard, salt, and pepper to the tuna. Mix well to combine.
- Spoon the tuna mixture into the hollowed avocado halves.
- Garnish with fresh dill or parsley, if desired. Serve immediately.
Notes
- For extra creaminess, mash a small amount of the scooped-out avocado flesh into the tuna mixture.
- Adjust the amount of mayonnaise to your preference for a creamier or less creamy tuna salad.
- You can add a squeeze of lemon juice to the avocados to prevent browning if not serving immediately.
